Exploring “Beyond Sushi” – A Fresh Approach to Maki

It’s a place that is so perfectly in line with my ideal eating habits and flavor profiles that I think the owners somehow read the depths of my food soul.  Intrigued yet? I won’t draw this out any longer, then. World, meet Union Square eatery (and my personal piece of food heaven), Beyond Sushi.

This charming little establishment “fuses unconventional pairings of fruits, vegetables, and whole grains and combines them ingeniously into a nourishing sushi roll.”  All the rolls are 100% vegan and made with locally grown, fresh ingredients that are crafted into gorgeous pieces of eatable art with each bite being bursting with fresh, clean and vibrant flavors.  Almost everything on the menu can be made gluten free as well!

They have nine delicious rolls always on the menu with equally exciting “Rolls of the Month and Pieces of the Month” to try new creations. Being a lover of all things spicy, my personal favorites (staple rolls) are:

The Spicy Mang Roll

Avocado, mango, English cucumber, spicy veggies rolled in black rice drizzled with a toasted cayenne sauce. 

La Fiesta Roll

Avocado, Chayote Pickled jalapenõ, Cilantro rolled in Black Rice and drizzled with a Chili Mango sauce.

I also highly recommend their Nutty Buddy Wrap: A mixture of  buckwheat noodles, cashews, carrots, cilantro, Jalapenõ peanut butter, avocado, sesame oil, tofu, and romaine with a Sweet Soy Mirin sauce.  

Beyond Sushi is a place where the natural flavor of the foods are highlighted while absorbing a variety of nutrients in every bite. Pair your meal with one of their mint lemonades and enjoy a truly superb culinary ride.
